Diabetic rice (Diana rice) has more nutrients compared to white rice because of the presence of bran layer. This layer has digestible fiber along with minerals and vitamins that are absent in white rice. It is rich in manganese. Manganese is used in producing energy and Antioxidant protection. It is good source of fiber and selenium. It helps in prevention of cancer. Daily intake of this rice reduces the cholesterol. Its high fibre content combined with a low glycemic index (the rice releases sugar slowly into the bloodstream) makes it ideal for people with diabetes. Cooking Instructions : Soak the rice overnight. For 1 cup rice mix 4-5 cups water. Leave it for approximately 5-6 whistles on a pressure cooker.
